Job Description
PG Global is seeking an experienced Chief Cook to be the head of the galley and responsible for preparing and supervising the preparation of meals for all crew and passengers. In this role you must ensure high standards of food safety, hygiene, and nutrition onboard, while managing provisions and leading the catering team.
Key Responsibilities:
1. Food Preparation & Service

Plan, prepare, and serve daily meals that meet company and crew requirements.

Provide a varied and balanced diet within the available budget and stores.

Supervise catering staff (Second Cook, Messman, Steward) during meal preparation and service.
2. Galley & Hygiene Management

Maintain strict hygiene and cleanliness in the galley, mess rooms, and food storage areas.

Ensure compliance with international maritime food safety standards (MLC 2006, HACCP).

Oversee cleaning schedules and proper use of galley equipment.
3. Stores & Provisioning

Plan menus according to voyage duration, crew size, and available stores.

Manage inventories of provisions and galley consumables.

Supervise receipt, storage, and rotation of food supplies to prevent spoilage and waste.
4. Health, Safety & Compliance

Enforce safe food handling and preparation practices.

Ensure compliance with STCW and MLC requirements for catering.

Participate in safety drills and emergency duties as assigned in the vessel’s muster list.
5. Leadership & Crew Welfare

Train and supervise catering staff to maintain service standards.

Support crew welfare by providing nutritious, culturally appropriate meals.

Act as a role model in professionalism, teamwork, and safety.
Qualifications & Requirements:

Ship’s Cook Certificate (required by MLC 2006 for international vessels).

STCW Basic Safety Training (mandatory for all seafarers).

Prior experience as Chief Cook, Second Cook, or equivalent at sea.

Strong knowledge of nutrition, hygiene, and food safety practices.

Ability to manage a multicultural team and adapt menus to diverse diets.
